I would like to give some insight about my school and culinary study.
I follow my studies at Albeda MBO, location Rosestraat, which is a vocational school you can follow after highschool. I decided to do culinary school because I wanted to follow my gut-feeling and desire for working with passion instead of must.
The school is quite big with multiple studies in one building but the culinary studies have their own little departement. There are six types of culinary studies you can follow, with about 126 students in total:
Zelfstandigwerkend kok BOL
Leidinggevende keuken BOL
Gespecialiseerd kok BOL
Zelfstandigwerkend kok BBL
Leidinggevende keuken BBL
Gespecialiseerd kok BBL
I currently study 'Gespecialiseerd kok BBL' which roughly translates to 'specialised cook'. The BBL means that my studies consist of 4 days of internship and one day school (BOL is the exact opposite with 1 day of internship and 4 days school). There are 3 different levels: 2, 3 and 4. They're all based on the difficulty and depth of the assignments we have to hand in and they allow students (who all have different was and speed of learning) to have the same opportunies when it comes to getting a degree. What's good about what I study and what my school/internship offers me is a work-experience. I find working and learning so much more interactive and helpfull than sitting behind a desk and only learnng theory (also important tho). It also allows me to form connections in the restaurant industry which is always helpful as it's really not as big as you might think. I would encourage people to also follow this study for this reason alone to be honest.
If I would want to continue studying after getting my degree there are loads of options, it just depends on what I want to do. I can follow up in management, or specialise in a certain field like pastry chef, I can study some stuff on how to open my own restaurant, so yeah that is pretty cool.
Given I only go to school one day a week, I don't really spend that much time there but the teachers are nice and the building is beautiful.
The school help us with finding a internship. We're given alink where we can find restaurants open for internships near your house or where you want to work. We are linked to one person from the school who checks up on us at our internship and we are linked to one person at our internship who learns and guides us through what we need to learn to get our degree. There is a vast vareity of restaurant you can work at and it's fully up to you where you want to learn. This can be a family restaurant or a michelin star restaurant.
